Description

Easy lemon cake mix cookies made with just 5 simple ingredients. These delicious Spring cookies are bursting with fresh lemon flavor!


Ingredients

  • 15.25 ounce box lemon cake mix
  • 1/2 cup vegetable oil (just under 1/2 cup recommended)
  • 2 large eggs
  • 1 lemon (juice and zest)
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine cake mix, oil, and eggs. Add 1 tablespoon fresh lemon juice and 1 tablespoon lemon zest. Stir just until combined.
  3. If desired, refrigerate dough for 15–20 minutes to make it easier to work with.
  4. Scoop dough onto prepared baking sheet and roll each ball in powdered sugar.
  5. Bake for 9–11 minutes, until set but not browned. Cool on pan for a couple minutes, then transfer to a wire rack.

Notes

  • To freeze: Cool completely, then freeze cookies on a baking sheet for 30 minutes. Transfer to a freezer-safe container or bag for up to 3 months. Thaw for 2 hours before serving.
