Easy lemon cake mix cookies made with just 5 simple ingredients. These delicious Spring cookies are bursting with fresh lemon flavor!

- 15.25 ounce box lemon cake mix
- 1/2 cup vegetable oil (just under 1/2 cup recommended)
- 2 large eggs
- 1 lemon (juice and zest)
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, combine cake mix, oil, and eggs. Add 1 tablespoon fresh lemon juice and 1 tablespoon lemon zest. Stir just until combined.
- If desired, refrigerate dough for 15–20 minutes to make it easier to work with.
- Scoop dough onto prepared baking sheet and roll each ball in powdered sugar.
- Bake for 9–11 minutes, until set but not browned. Cool on pan for a couple minutes, then transfer to a wire rack.
Notes
- To freeze: Cool completely, then freeze cookies on a baking sheet for 30 minutes. Transfer to a freezer-safe container or bag for up to 3 months. Thaw for 2 hours before serving.
